From her roots at the New Sarum Diner in Ontario, Canada, to mastering Southern cuisine in Lake City, Florida, Tracy’s love for blending tradition and flavor shines through in every meal.
I’m Tracy Hicks, and my culinary journey began at 17 in the cozy, rustic atmosphere of the New Sarum Diner in Ontario, Canada. Nestled in the heart of a small town, the diner embodied the warmth and simplicity of hometown dining—a place where hearty meals and friendly faces made everyone feel at home. That experience left an indelible mark on me, inspiring my passion for creating food that nourishes both body and soul.
When I moved to Lake City, Florida, over 30 years ago, I discovered the art of Southern cooking and fell in love with its bold, comforting flavors. Combining the rustic roots of my Canadian upbringing with the soul-soothing traditions of Southern cuisine, I launched CFAO 25 years ago to share this unique blend with my community.

Today, my catering design style remains true to its rustic beginnings. From the warm, inviting presentation of our dishes to the authentic flavors in every bite, everything we serve reflects the charm and nostalgia of a simpler time. One year ago, I opened a new venue in Lake City where I continue this tradition, preparing homestyle country dinners, holiday feasts, and a variety of delicious options, including breakfast pastries, sandwiches, hot dogs, turkey waffles, mac ‘n cheese, casseroles, salads, and take-home meals.
